Eps with Dual Audio Tracks

Hey Guys

I am a newbi in here, first time post and hopefully this is the right place to ask my question. I got some Anime Eps in Dual Audio (English and Jap).

My question is how can I encode them with just one Language Track (English) Is their a way without encodeing them, cause I don't want to lose the quaility. So if anybody can answer my question, I would be really thankful.
