Xvid Rip in Proper Stereo!!!

Normally In a DVD you have many sound type options like Stereo,Dts,Dolby Digital 5.1.
Problem is that when we Rip such Dvd in a stereo Version with Mp3
or Ac3 what I Notice is that the Audio Volume keeps on Fluctuating
High And Low which is very irritating.You really dont get good sound.
How can I rip it with Stereo option as the dvd already has it for proper Stereo Sound as I have a stereo Speakers.
