Is it necessary to apply the DVDfab's function "correct DVD sector" to every DVD that is produced by DVDshrink or DVD2one?

No - If you've successfully produced a DVD copy using either DVD2One or DVDShrink there should be no need to do anything further, as they are already compliant DVDs...
