confused...which format for streaming video?

What is the best format to use if I am streaming video from a harddrive to a server? I know that vobs work, mpeg, and avi, but I need to encode the video so I am not using up too much harddrive space. What format and what size is suggested to keep quality, but not hog up too many gigs?
