Hi
most dvd to divx(if not all) programs will let you preserve the 5.1 audio track, look out for a "keep ac3 track" option in the program.
avi.Net, StaxRip, Autogk, Gordian knot, Virtualdubmod will let you do that.

select AC3 instead of MP3, doing that you're preserving/keeping the original audio track, you will notice that when you select ac3 the window with the audio bitrare will be greyed out meaning no audio will be converted, just preserved/kept in its original format ac3.

You can use new Aud-X codec to make compressed 5.1 sound.

we will only get the "so called 5.1 mp3" if we play the divx file on a 5.1 audio capable pc, when played back on a SAP we will only get 2.0 mp3
