DVDShrink Copy and Quality

If I rip a DVD to my hard drive (and don't edit it at all) using DVDShrink, and then burn it back to a new DVD, will I lose much quality?

Depends on the size of the movie, if you do full disc or movie only, run deep analysis, select sharp or smooth quality, etc.
