What's the drawback of using a low bitrate matrix with DVD-RB-PRO and CCE SP 2.66 on material that has a relative high bitrate (average>4000) ???

The difference I noticed that it looks that there was even more VBR in the output material.

Using the encoders default for exmaple had a spike of 8100 Kbps and when using a low-bitrate matrix the spike was even 9300 Kbps.

But what about overal quality ?

It looks like the low-bitrate matices improves the VBR function of CCE, making it even more adaptive to the source material....

But what are the drawbacks, they sure would be there, although I didn't notice them....

You get a better picture at low bitrates using a low-bitrate matrix because they remove very small details.... reducing pixelation, etc. If you use them at higher bitrates they will continue to remove the details -- and you get a smoothing effect.
