What is the difference between Wide Subtitles and Letterbox subtitles, I have tried ripping same file using both of them [two rips] but final result is the same.
Also, some movies show option as Subtitles: Wide/LetterBox/Pan&Scan,
what does this mean

it reffers to the size of the video, if it has been previously cropped, etc but I cant explain why there are different subtitles, maybe it is to better fit the screen when you watch your DVD in pan&scan mode (which you should never do :) ), etc. When working with AGK there seems to be no difference, but I always choose widescreen, because when present, this format is the most respectful with the original size of the video of the movie, I think.
but choosing one subtitle or another wont change anything to the video processing...

It has to do with the placement of the text, and depending on how you ripped them they may or may not appear in a different place. Once you've converted the subs to .srt it no longer matters which you choose, since all placement parameters are thrown out. Leaving them in the .idx and .sub format can have them appear higher or lower, for example if you're viewing a letterboxed video on a 4:3 TV or monitor the subs would be below the picture with the "Normal" sube, or within the picture with the "Widescreen" ones (I think - I may have this backwards, but you get the idea).
