I looking for any info on the Players Time/Text field.
I noticed that a very small % have a title. Most Display NO TEXT. How does this work, where is it and can it be edited or created?

Most DVD movies do not have DVD Text. It is optional for the movie studio to include it and many don't. Movies with no text will show "NO TEXT" on some dvd players.
Since commerical discs are pressed, you can't edit or create it.
You could backup to a blank disc and add the Text with PGCEdit. But then you would loose quality transcoding the disc unless you used the expensive dual layer media.

I have a thought...you could get one of those small picture-frame holders meant to sit on a desk or shelf and hold a small, flat object upright for display, place that on top of your DVD player and put the DVD case in it. That way you can always see the title of the DVD you're watching.

There are some dvd jukebox players that will allow you to connect a PC keyboard and enter the movie titles manually. You have to check your 400 disc player's owners manual to see if it has this capability. There are only a few players that will allow you to do this.
