Resolution

As far as I know, the resolution for most dvd is 720x480. If I use a capture card to capture the video, let say to 1024x576, will the captured video not as good as 720x480?

The general recommendation from our FAQ and Guide is to capture analog video into digital video at the largest resolution possible by your Analog -> Digital hardware.

I'm not aware of any PC-based capture equipment able to capture at the resolution you're suggesting. But my ignorance of the existence of such equipment does not mean that sort of equipment is a fantasy. You may be aware of something that I am not.

But if your question is about analog capture of DVD sources, my recommendation is simply, don't. Instead, I would recommend keeping it in digital video format (MPEG-2 720x576/720x480). The process of Digital -> Analog -> Digital will introduce loss, regardless of capture resolution.
