I have captured a vhs tape via my minidv camcorder analog-digital passthrough
The problem is that at the left side of clip, the skintones and reds look greenish:

Also, the greens look overall desaturated
Notice the grass and the foliage:

The snapshots were taken in Virtualdub, file frameserved by Avisynth and decoded with Canopus codec

Any ideas on how I could improve the clip so the colors will look more natural?

The color change from left to right is a phase error that is happening in the analog portion of your capture. Change your video cable to a high-quality cable, S-video if possible, or a good composite cable if your camcorder has no S-video input.

If that doesn't help, the problem is with the VCR or tape. Try a different VCR, preferably a professional model with a TBC.

Also, the alternate red/blue color on different lines of your output is a chroma upsampling error, a result of frameserving YV12 from your AVISynth script to VirtualDub. Add a ConvertToYUY2(interlaced=true) to the end of the script to eliminate.
