But...there is NO way to make subtitles NOT burn but ALSO viewable on a standalone right? I either have to burn them in, or have none at all on my standalone right?

Depends on the standalone. Some of them do support external subs. Look up your player in the videohelp.com Database (http://www.videohelp.com/dvdplayers) and some of the comments might tell you. For example, the very common Philips DVP-642 (http://www.videohelp.com/dvdplayers.php?DVDnameid=4117&Search=Search&#comments) will play subs in SRT format.

Just make sure the subs have the same name as the movie. Movie.avi and Movie.srt, and then burn them together as a data disc. I don't have that player (good guess though, eh?), so I don't know what more is involved in getting them to play. You may have to press the Subtitle button on the remote when starting the movie. Again, check the comments at that link. There are 300 of them, so someone must have said how.
Or maybe someone here with that player can fill you in.
If you only have the subs in idx/sub format, you'll have to OCR them to SRT using Resynch or SubRip. If you have them in a different text format, it's an easy matter to convert to SRT using Resynch. Resynch is included as part of the VobSub package. If you have GKnot, go to the Subtitle Tab to access Resynch.

don't I need to mux the subs into the avi?

No. Keep the srt files separate. I have a DVP642 and it will work if you follow what manono said.
