I work for a University as a student worker and we are currently converting our entire inventory of VHS tapes for distance education students over to DVD using SVHS decks hooked up to DVD recorders.

Now that I'm almost finished with this part of the project, the next step is to create a sreaming media files from the DVDs. I've been looking around but I can't seem to find any good guides on creating streaming media from DVD's.

Our streaming server has the capability of streaming the latest versions of QuickTime, RealMedia, Windows Media, and Flash (FLV). I'd like some recommendations for how to do the convervions from DVD to whichever of these formats you think would be the best for streaming to studends on relatively low bandwidth connections (384k is about the average). Most episodes are 30 minutes each but some are 60 minutes.
