Hi-

should i check or uncheck the 'force itu resize method' box in the autogk-assisant?

Since you don't know what it is, then you can probably ignore it. But if you want to educate yourself about it, and probably learn more than you want to know, then read a little way down the Sticky (http://forum.doom9.org/showthread.php?s=&threadid=42708) until you get to the part about the ITU standard, and then make up your own mind.

... 'force sharp mpeg matrix for xvid' what does that do?

It forces AutoGK to use the sharper and more detailed matrix, even if the results of the compress test would prompt AutoGK to use the softer matrix. The sharp matrix is also less compressible than the softer one.

also, is there ne way to change the height as well as the width of the resolution? it seem i can only pick 640 instead of bein able to force 640x272 or 640x352

You don't need to also choose the height. If it's a 2.35:1 movie, by choosing 640 horizontal width, you should also get a height of 272. If it's a 1.85:1 movie, choosing 640 should also give you 352 for the height.
