I know compressibility questions are asked over and over again... However, I could not find an answer to the question:

What does it mean, if GK returns a compressibility value greater than 100% ?

It means that you won't be able to reach the file size you set. So, raise the resolution, go for a smaller file size (1 CD instead of 2), use better quality audio (AC3 instead of MP3), knock off the B-Frames, use less filtering, etc. Then run the compression test again to see if it's back below 100%.
