Most of the transcoding tools (like DVDShrink, Instant Copy, etc.) preserve advanced structures like angles and seamless branching.

Most of the re-encoding tools (like The Big 3, DVDRebuilder, etc.) don't preserve all advanced structures (yet).

There are a lot of differrent approaches for removing assets. Some of them support some or all advanced structures, some of them do not. I don't have any personal experience with DVDClone (I thing that's the name), but it seems to be a favored product here for removing assets.

It's great for removing titles, audio streams, subtitles, etc. while preserving the original DVD structure. Works very well even if you don't need to transcode the actual video but simply remove the extras or split a DVD-9 in two.

is there a quality comparison avaible of the transcoders that allow the mentioned dvd features, so i know which one to use after removing the extras (if it's still over DVD5-ize)?

There is a sticky (http://forum.doom9.org/showthread.php?s=&threadid=58950) in this forum that has a list of popular transcoders. As for the quality, I believe everybody here already agreed that everyone's preference, vision, perception of quality, and TV/monitor are different, so you have to decide for yourself. Most of those programs that are not free have a trial period exactly for that purpose.
