Joining 2 sided DVD side into 1 DVDR ?

I got this DVD "THE PELICAN BRIEF" which it's on both sides...how to make it 1 DVD on hdd ? and then convert to DVDR (this part i know)

just how to join it together ? and also subs etc...

The disc you're working with is commonly referred to as a "flipper". There're many threads dedicated to the topic, and certainly more than one procedure with which to accomplish this task, but here's one of the most recent threads that deals with a question on flippers.
