I have always used decrypter,(Awsome program!!), along with vobrator then ifoedit to reauthor my dvd's for backup. Other than being a bit labor intensive (intensive is a bit strong), it has always worked great. I recently used dvd shrink with the reauthor button to rip just the main movie and it worked perfect without having to use the other programs. My question would be, does anyone have any pro's and cons (specifically cons) to using shrink instead of the three programs to backup my dvd.

DVDShrink is very solid, fast and functional. I've used both for quite awhile and I don't have any cons about Shrink. However, based on your workflow, I'd say that Shrink is going to save you time since it takes one-click to rip, shrink,and build the necessary IFO files to play the movie.
