I'm looking for something that does the inverse operation of OggMux.

I can extract video from OGM with VirtualDub Mod, but can't extract other things like audio, subtitles with it.

Why not? Maybe you missed an option saying "Demux to file" or something like this...

As Griniaris said you can demux, video, audio,subtitles with VDMod.

streams-->streamlist--> mark your desired stream(audio/subtitles) and press "Demux".

The only thing what you can't demux is, AFAIK, the chapters.
