First of all I'd like to specify that I did some search, cuz I think this has surely been answered before, but I could find nothing...

Coming to the point: my dvdrip has it's VTS_01 - Stream Information.txt that tells me

0x80 - Audio - AC3 / 6ch / 48kHz / DRC / Italiano / LBA: 42 / PTS: 00:00:00.280 / Delay: -80ms

So when I mux the video with my encoded mp3 track, I go to interleaving options (Virtualdubmod) and set delay to -80 (or the opposite +80?) and should I change the other 2 options or must they be left where they are?

When muxing, set the delay to exactly what the stream information says: -80 in this case. The other settings should not need to be changed.

However, IMO it would be simpler to adjust your delay with besweet while encoding. You can use vob input and -d auto. It doesn't get easier than that :).
