In case of AVI (or which "video" format do you mean?): The same as anyone would use for years: VirtualDub / Nandub / VirtualDubMod.

It just depends on the content, especially on the compression format of the audio stream: If it is e.g. AC3, better demux with VirtualDubMod and decode with BeSweet or HeadAC3he (because there is {almost} no ACM decoder für AC3 audio until today); else you may use "Full processing" mode and "Save WAV", although decoding with BeSweet/HeadAC3he shall always provide a better quality than using an ACM codec!

But doesn't have doom9 any guides to read that before asking here?!
