How to cut and shrink please?

I have used DVD Encryptor to copy files to the hard drive. These come to 7+gb and will not fit on a DVD. I want to:

1. Try and burn a part (5 mins.) to a DVD to test on my TV DVD player and

2. What software (shareware, commercial) can I use to "compress" it to fit a 4.7gb DVD?

I personally use DVDShrink (freeware) to backup my DVD movies. Download a copy and follow the 'how to' guides here (http://www.dvdshrink.info).
