I want to backup a DVD contains these Audio Tracks:
1. English AC3 2-ch (Default Audio Track, Value is 3276)
2. English AC3 6-ch
3. Commentary
If I only remove the default audio Track with DVD Shrink v3.0 Beta 5 to backup the DVD. Will the DVD Player play the second audio track or no sound by default?

Strip what you want to strip and afterwards, use this guide (http://forum.doom9.org/showthread.php?s=&threadid=60444) to fix your IFO.;)

...but to answer your question, if you didn't use the guide, your second audio won't be heard.

If you had performed the guide I gave, your second audio WILL play in place of your stripped default. Your question only leads to another question...why haven't you tried it yet?

Did your guides mean this:
1. Use DVD Decrypter rip the full disk first.
2. Perform your guide to stripped the stream with Ifoedit.
3. Re-author the DVD Decrpter output files with DVD Shrink.
This method Wrong or Right?

This method Wrong or Right? Click on the link in my first post in this thread. What does my guide's title say? It should give you a big obvious hint of when to do the steps.
I highly assume that you preferred to used DVD Shrink to strip your audio from reading your first post. That why I pointed you to that guide.

i was afraid making mistakes following your guide, making my set of files unreadable
so for this task i used dvdfab, as seen here http://www.mrbass.org/dvdfab/, my dvd was already made by ifoedit, and was movie only, what do you think ?
i know your solution is more powerful but i don't have your knowledge
many thanks
