Setting subtitle menus, audio menus, etc.

In DVD Maestro, I used to be able to point it to what is the subtitle menu, what is the audio menus, etc. Now, it only asks for the title menu.

Also, if I press root menu on the DVD player, it freezes for a sec and keeps playing until I press title menu. How can I also fix that?

When I set the connections, I don't see the spot for them anymore. How can I get them back?
