dvd - cd (audio only)

I'm trying to rip some isntructional videos from dvd and put the audio onto cd (audio only). my problem is the dvd is set up as, insert goes to menu, menu goes to like 7 different chapters. selectable simalar to the way a scene selection screen is. any help with this one?
