My wife came home from the store the other day with both Laputa ("Castle in the Sky") and Spirited Away.
I know that a number of people have been waiting for these US releases for some time, primarily to see the differences between fansubs and what Disney has done.
I've been playing with the subs on the Laputa, and thought I'd pass on the following info.
From menus, you may choose either "English for the Hearing Impaired" or you may choose "English." Choosing "English for the Hearing Impaired" matches the English Dub script (plus the description of sound effects) developed by John Lassiter's team at Pixar. Selecting the "English" subtitles matches the Japanese script.
It's interesting to note that the English Dub script includes a lot of extra lines that never existed in the original.
There are 5 English subtitle streams on this disc.
Stream 00 is English, wide
Stream 01 is English, letterbox
Stream 02 is English, wide
Stream 03 is English, letterbox
There is also a CC stream.
00/01 and 02/03 are equivalent streams in different display positions, as is often done when authoring widescreen and they want text in different positions for 4:3 or 16:9 TVs.
00/01 are the dub script, 02/03 are the English subtitles for the Japanese script. The CC stream matches 00/01, except that it's all in upper case.
I expect that Spirited Away will be the much the same. Kiki, which is also in distribution right now, was dubbed before Disney acquired Ghibli distribution rights. I don't have it on DVD, and don't know how the subs look.
