I'm using avisynth 2.5 and xvid to encode.
I was planning to get a dual-channel board like Canterwood when it comes out if it has any effect on encoding.

Yes and no. If you use lots of filters in AviSynth, then it's quite likely that you will see a speed-up, depending on the memory access pattern of the filter. Filters that do lots of caching and copying of frames will benefit from a faster memory subsystem.
Straight up Xvid will prolly see a bit of an increase too. But most encoders are CPU limited. Most of the time anyway. The ways that the Athlon and P4 use and maintain memory useage is different by architecture and by supporting chipset. So it's not clean an answer as to just say "Yes, it will be faster."
Getting an 'C' model P4 with the 800MHz bus and the dual channel DDR won't be a slouch by any means. But whether or not it will be a huge(er) advantage over the Athlon remains to be seen.
