I have a problem in that I can't use CCE due to my processor speed is lower than what CCE requires, which means I can't use the MakeitEsay method.
My question is can any of you tell me which guide I can use, or which encoding software I can use in place of CCE to author my dvd-r's keeping the main menu's and such.

Although not so good as CCE in terms of quality Tmpeg will be the best alternative u have. But the time required would kill you. We are talking more than 100 hours for a 2 pass vbr in a PII at 266mhz.
As for the quides would be the same. There is a forum for Tmpeg.

Thanks oddyseus, I appreciate the response I'm running a AMD K62 450, I'll try the Tmpeg route until I upgrade my Dinosaur

Canopus ProCoder is also an option, provided you don't use Mastering Quality. MQ creates excellent results, but cripples you in speed terms (just like TMPGEnc). However, if you use "High Quality" instead, you get a decent result with repsectable speed.
By the way, speed issues aside, I would contend that TMPGEnc CAN create MPEG files of comparable quality to CCE in many instances. With particularly fast action sequences, TMPEGEnc's motion-search accuracy can be a little insubstantial, but generally, the quality is, IMHO, on a par with CCE. I only favour CCE over TMPGEnc because of CCE's speed and ability to manipulate VBR parameters more effectively to squeeze maximum quality onto a limited capacity disc.
As with all MPEG encoding, it's a subjective matter. If you cannot use CCE due to your CPU, then ProCoder is an excellent compromise.
