I guess it will be in MPEG-2 with MP2 audio.

UK Digital Satellite works in that format, except it has DolbyDigital or DTS surround.

It can be be interlaced or progressive. It varies from program to program (a channel may do one program progressive and the next interlaced) - the first episode of Massiah II on BBC1 was progressive and then the second part was interlaced, on the very same channel from the very same tv system.

The audio is broadcast at AT LEAST 48kHZ MP2 but I guess that with the new DTV it is probably done using (usually) 2 channel AC3 or something weird, it is hard to find info like that because it isn't usually useful for the average guy. There will be some tech sheet somewhere, try looking for Crown Castle, they sort out the broadcasting side of the BBC, they run the network for broadcasting in the UK and things like that. If you contacted them at www.crowncastle.com (or co.uk) - I am sure they could return some useful info.
