DVD Backup Size Issue...Please Help

First off I am new to this board and new to the DVD world.
I am having difficulty in backing up my DVDs, a couple I had no issues with however some I am finding are over 7gig in size and the disc only holds 4.7gig. Is there anyway you are able to keep the whole movie and extras and somehow resize the overall filesize so that it can be put onto a 4.7gig dvd?? If anyone can give me any information or point me in the right direction it would be much appreciated.
