Assuming you mean Gordian Knot:
Fast Deinterlacing = cuts the vertical resolution in half prior to resizing. (Uses VerticalReduceBy2 .avs filter)
Field Deinterlacing = uses Donald Graft's Fielddeinterlace .avs filter from his DeComb filter set. See the Decomb documentation in Gknot's ..\doc folder.
You'll actually want to test the output, since often which looks best is both subjective, and content dependant. Use the "Preview" button in the "Save&Encode" window to examine the different .avs filters
Warning: Fast Deinterlace bug exists in Gknot 0.26; to use it without trouble, be sure you're at 0.26.1.

What is the consensus. Does FieldDeinterlace look best overall?

fast deinterlace seemed very slightly duller/dimmer than the feild deinterlace product to me but was still pretty good.

Exactly how much faster is it.

well... i encoded a 60 min movie both ways and the encode with the feild deinterlace was about an hour slower but looked better
