WAVE to ac3 or DTS

1.I have AVI file of my home video HD I whant to demultiplex audio and video strime separately. What soft do I have to use to di this? TMPGEnc refuses to do that.
2. What soft do I have to use to separate right and left chanells in a stereo WAVE file. What I am trying to do is to reencode my stereo WAVE file using sorcode to ac3 or DTS formats to use on my home DVD.
I'd wery apprisiate any help on this subgect.
