Now i want to demux the video stream and audio stream for authoring it with dvd maestro

If i do it with vobedit is ok but i have 5 files(5Vob-->5mv2) in m2v format

How can i have one m2v file with all the film?

I have to extract the ac3 audio with dv2avi is it ok?

Hy, try take the audio and video with dvd2avi, change the video with Vfapi and use cce to make the m2v file. Than you can use Dvdmaestro. Use this guide: http://www.doom9.org/mpg/maestro2.htm ;)

If you already have the VOBs and they are the proper size to fit on a DVD-R then just use IFOEdit to create some new VIDEO_TS.ifo, etc. files and then burn with Nero.

If u want 1 m2v file to work with, simply use smartripper(stream processing) and choose demux for the video file and it will give u one m2v file for the whole movie...do the same for the ac3 track. You can do both at the same time!
