I'd like to know if I can use a propietary hardware codec (like matrox mjpeg or ati vcr1) to rip with DVD2AVI a movie to later edit it, and then make the final MPEG1/2 encoding with the right encoder.

Yes, it is possible to do that. I've done it a few times with Matrox MJPEG.
If you have enough space I would however recommend that you use Huffyuv (can be found here) (http://math.berkeley.edu/~benrg/huffyuv.html). That way you will not loose any information in the AVI that you make the edits with.
