Should I deinterlace my interlaced DV file or should I let the software dvd player take care of that?
I would watch the dvd on a computer monitor or projector.

deinterlacing the footage will help to get lower bitrates in encode.

deinterlacing will reduce the bitrate needed for same image quality, however, you will loose TEMPORAL information (i.e. your clip will be 25 fps instead of 50fps, assumming pal).
i would keep it interlaced. it's worth the extra smoothness, especially if the clip is with much action.
for a 'quiet' clip, of ppl talking or very few movements, deinterlacing could be a good idea.
just try both methods, and decide for yourself about the tradeoff between deinterlacing+lower bitrate and keeping interlaced+smoother clip.
