Newbie simple DVD creation

Hi all

i would like to experience with miniDVD / cDVD whatever it's name is and I need your help:
what i want to create is a 2 CD's Movie which i'll have a simple one video stream with permanent subs (like the one which results of DVD2SVCD) and one AC3 stream.

to be simplistic about it I just want to make a SVCD with AC3 Audio.

can you please describe the steps or point me to a guide describing this process....

I have posted some of my findings there. I mostly discuss the process to burn video and ac3 streams to DVD, but the same concept can be used on sVCD.
