I was just getting ready to gear up my machine for VHS captures to archive my old VHS collection...
but now I see set-top converters on the market....
should I just get one of those??

Defenitly NOT because no settop box/converter provides you the power that a well setup MPEG encoder (combined with VDub´s frameserver and several filters) has.
Offline encoding is slower but still provides the best results.
-Learn on VDubs or AVI Synth Denoise filters (Temporal Smoother, Temporal Cleaner, Smart Smoother, 2D Cleaner, etc)
-Capture in FULL NTSC (720x480) either in Huffyuv or in MJPEG with a low compression ratio. You wan´t notice any difference between Huffyuv and a good MJPEG codec for VHS material.
-Learn to set up TMPEGEnc (or CCE)
