I need to re-encode my Blu-ray videos as Media Player wont recognize DTS. So, I may be re-encoding to AAC at about 512kbps. How much loss of quality am I looking at here? Would I even notice a difference. My other option is to do a pass-through with ac3. I wouldn't loose quality, but I believe the ac3's are only 5.1 as apposed to 7.1 that I suspect DTS-HD are.

Thats depend of your audio equipment (speakers quality, ...) and of your ears (olds, damaged, ...).

For my olds ears aac 512 Kb/s for 7.1 is more than enough.
