What are the best settings for x264 for encoding DVD Episodes ?
I already have made MKV files of them.

When you say "MKV files" what do you mean exactly? If you're unsure what I mean, please most a mediainfo dump of your file.

Asking what's "best" around here can have the forum police knocking on your door. :)
I assume you've muxed the original vob files to MKV and now you're wanting to convert them? Are you using a particular program?
In my opinion anamorphic encoding is the best option. Which actual x264 settings you use for encoding can depend on the target playback device. If you don't have one, the default x264 settings are fine. You just need to decide on quality/file size. If you're using a GUI such as MeGUI, it has options for setting a target playback device.
I always use single pass encoding with a CRF value of 19. The lower the value, the higher the quality and the larger the file size. Values between about 18 and 23 would be "usual". Using single pass encoding you get the same relative quality each time, but no control over the file size (it's basically one or the other). ie the file sizes of each encoded episode will vary.
