When I rip a DVD and select 6ch AC3 audio, will there be any problems playing them on stereo systems that do not support 6ch? (in other words, will the audio be heard in 2 Channels?)

Well, I played it at a local Stereo shop and the sub or rear speakers did not work... I did rip the 6ch AC3 with Smart Ripper and used SpruceUp to author and burn.

Part of the Dolby Digital encoding is that there is a down level converting for systems with only 2 audio out options.
