Currently, I have Windows XP Professional 32bit and Windows 7 Ultimate 64bit setup in a dual boot configuration. I primarily use Windows XP just because I'm more familiar with it. I'm wondering what benefits would I see if I upgraded to 4x2GB DDR2 800 (PC2 6400) and ran my x264 encodes in Windows 7.

With x264 on Windows 7 X64 I see a 0% difference between 2 and 8 GB. The difference is that there is more overhead to do other things while encoding. Superfetch also will use up more RAM if you have 8 GB which can be useful. Right now I'm encoding with a complicated .avs and it (the encoding process) using about 1,700 MB. But this is including VFW4X264. When keeping everything 32 bit it will use about 800 MB.

Better (and cheaper) to switch to linux for encoding. I saw ~20% increase with 64bit debian and kernel 2.6.32 over 64 bit windows 7 with --preset slow

Using what? avs2yuv, 32 bit avisynth and 64 bit x264? You can do exactly the same thing at roughly the same speed on Windows. Lord_Mulder's simple launcher automates this quite nicely!
