As i wandered around the net i stumbled over this stream encoded with
CoreMediaAuthoring 677, CoreMedia 420.17, i386

and it is High Profile ? so did Snow Leopard also came with a big Encoder update ?

CoreMedia is the new apple's toy for video. But it's impossible to use it outside the presets in QuickTime X yet, so I didn't bother to test it.

Hehe i thought something like this actually first i thought it could be CoreCodecs H.264 Encoder ;) due to the the "CORE" naming convention but then i remembered that Apple also uses it for many of their OS Components (also of course Format profile : Apple TV Codec ID : M4VH) ;).
I tried to find a changelog or some description in any form like a Developer API no luck yet but definitely they enhanced the Profile support, maybe someone here can link me to some information :)
