I can't seem to figure out how to add certain settings to my Mencoder options line. I have them all except the following: imin, imax, bmin, bmax, pmin, pmax, max_key_int, min_key_int, vbvmax, vbvpeak, vbvsize

What the options names are for those that I listed. I've tried the command names used if encoding with xvid_encraw, but none of those are accepted.

Have you ever considered paying a visit to mplayer/mencoder man page? :)
Search for "-xvidencopts", under there you'll find:
for imin, imax, bmin, bmax, pmin, pmax: look respectively at min_iquant, max_iquant, min_bquant, max_bquant, min_pquant, max_pquant,
for max_key_int, min_key_int: min_key_interval, max_key_interval
for vbvmax, vbvpeak, vbvsize: these are hardcoded into the profiles (you can't change them in the windows vfw version of the encoder), so you'll have to look at the "profile" option.
