mkv to avi

I'm a newb maybe this has been asked lots of times before but I can not find the answer. Is there a way to convert a mkv to avi?

Step 1: Demux. Use MKVToolnix/mkvextract to dump the relevant tracks
Step 2: Remux. Use AviMuxGUI to make new AVI
Step 2a: In case of AVC video, use avc2avi to make video-only AVI first
Step 2b: In case of VFR video, use AVIRead and tc2asc on video-only AVI
Step 3: ???
Step 4: Prophet

Start with the original source disc. H.264 in AVI is sort of an ugly hack, and non-compatible with many (all?) standalone hardware devices (which is, I assume, the reason you're converting in the first place). Since you're transcoding anyway, start with as high quality source as possible.
