Are your subs in VobSub format? Chances are the DVD color palette info isn't getting carried over.
Try to modify the subtitles color before encoding with DVDSubEdit.

If you're not getting anywhere with DVDSubEdit, try the old VSRip package or even the VOB -> VOBSub function in Avidemux. Beyond that I have little experience with the VOBSub format.

Nah, the ones where you need to type use Optical Character Recognition (OCR) to convert DVD subtitles to SRT and often need a fair amount of help from human eyes. VOB->VOBSub converters do not. On the other hand, text-based subtitles, particularly the Advanced Substation Alpha (ASS) type, have the potential to be far richer stylistically.
