Are there any software players that will display on two monitors? I am using a dual monitor setup whereby my second monitor is an extension of my primary monitor and it runs at a different resolution. I therefore cannot use a clone setup.

Using an Nvidia or ATI card?
Have a look here (http://www.jillesvangurp.com/2006/11/06/nvidia-tv-out-aspect-ratio-trouble-workaround/#comment-19816) if you're using an Nvidia card. ATI can also mirror your video to a second monitor, but I don't know the details of that.

It should be possible to clone the "Video Overlay" from the player running in primary screen to the secondary screen. It's called "Theater Mode" in ATI drivers.
That should work independent from the player software, as long as the player uses the directx/overlay renderer.
However it seems that "Theater Mode" doesn't work together with "Extended Desktop" mode. Works like a charm in "Clone" mode though.
Note: The "Clone" mode works with different screen resolutions too. If the second screen cannot cope with the first screen's resolution, it will remain "off" until you play a video.
Once you play a video (via Overlay renderer) the second screen will switch to a suitable resolution and display the Overlay in fullscreen size...

I've got another computer with an ATI-card and extended desktop. And theater mode sometimes works.
But I never bothered to find out the intricacies, since I have another computer that's dedicated to watching film/video.
