You have a lot of guides in
Sticky: GUIDE LIST: Stereo-to-Surround Conversion Guides (http://forum.doom9.org/showthread.php?t=83752)
The best is at your choice.

Isn't habitual upmix from 2.0 to 5.1.
For me the best option is preserve the original 2.0 and use DSP functions (in PC players or hardware receivers) to upmix at play time.

Not much point other than academic to doing 2.0ch -> 5.1ch upmix pre-encoding.
Might be interesting to see what could be done with an advanced DSP system - perhaps in Acid / SoundForge, or with a VST plugin...
EAC -> WAV/FLAC -> DSP -> Aften AC3 640kbps or FLAC.
So, my recommendation would be to use EAC, as it's consistently the most accurate ripping program available. Output 2ch 16/44 WAV or FLAC, and then do your DSP however you want. From this application, output 5.1ch 16/44 WAV or FLAC (you could upsample to 48KHz for DVD compatibility, too). Finally, encode with Aften to 5.1ch AC3 at 640kbps.
:curious: :)

little changes in the Blue_MiSfit's cool hints:
EAC -> WAV -> DSP -> WAV to AC3 Encoder (http://thefrontend.sourceforge.net/EncWAVtoAC3/)
don't forget to look the "guide list" (http://forum.doom9.org/showthread.php?t=83752) posted by tebasuna51.
