I need a software that can read a h.264 video's info such as profile, level, amount of b frame, pyramid, trellis, etc.

Those just read the header info. If you cut out the beginning of the video with mp4box, that info is gone.
Is there a cutting application which preserves that header information?

MediaInfo in debug mode is rather good at identifying what setting that have been used for encoding in MPEG-4 AVC H.264 encoder.

You can use H264Visa (http://www.h264visa.com/)(download (http://h264visa.com/downloads/H264Visa.zip)), In Summary dialog it has
Picture Info: Picture Size, encoding features
Stream Info: Profile and Level, etc.
Statistics Info: Encoding Rate, MB count for each MB type, etc

H264Visa is not free / Open Source. I thought i allready saw a warning about that a few weeks ago !
