I am recording from my DVB using Sharp DV-HR300 with S-Video & RCA for the audio. The output is interlace. But you can record the DVB setup menu also if you wanted to. So my question is am I recording directly from the satellite source ? or is this a bad way of recording ?

S-Video is an analog interface. So your satellite box is decoding the transport stream and outputting analog video. Then your recorder is re-digitizing it. Better would be a solution that captures the transport stream itself.

You either have a satellite box that supports it or you have a DVB card in your PC that supports it.

But a DVB USB receiver for my laptop, has variable qualities for different brands which should I go for ?

Go for one that meets your needs and is within your budget.
