I just discovered the remapping feature in DVD-RB. I don't know why I didn't see it before. But it got me thinking:
I know that most people, myself included, remove foreign language tracks to save more space, but I have never read anywhere how much... It's just curiosity.
And what's the size difference between the different audio tracks? Say, between a 2CH and a 6CH?

Typically a stereo (2 channel) AC3 is 192Kbs. That about 165MB for a two hour movie. 5.1 Channel AC3 is usually 448Kbs, or about 384MB for a 2 hour movie. They can change -- but it's rare.
If you have LPCM, it is huge. Even a 2 channel stereo is over 1.5Mbs. It will take about 1.28GB for a two hour movie. Never keep those unless you absolutely have to. You normally only see those on musical discs.

@jdobbs, what you think to add option for recomressing audio? Using free Aften AC3 encoder. This can be usefull for DVD's where LPCM is only audio.

I have that on my to-do list. I want to, at some point, add the capability to increase volume on AC3 sources and reencoding LPCM would be an easy side-benefit.
